A dish found in Tex-Mex cuisine, fajitas are grilled meat served on warm tortillas, and eaten rolled taco style. Authentic fajitas are made with skirt steak, although the popular dish can be made with other cuts of beef, chicken, seafood and vegetables. The same principles of fajita creation still apply. The meat or vegetables are often cooked and served in a sizzling skillet or platter with sautéed onion and green bell pepper. For fajitas, the skirt steak is sometimes marinated, and then grilled. The steak is allowed to rest and then cut into long strips for piling onto tortillas. Chicken Fajitas

Ingredients -
2 Pounds Chicken Breast Halves
1 Onion, thinly sliced
1 Sweet Red Bell Pepper, julienned
1 Teaspoon Ground Cumin
1 1/2 Teaspoon Chili Powder
1 Tablespoon Lime Juice
1/2 Cup Chicken Broth
10 Warmed Flour Tortillas
Guacamole
Sour Cream
Lettuce
Tomatoes
Preparation:

1. Cut chicken into diagonal strips and place in a slow cooker sprayed with vegetable cooking spray.

2. Top with onion and bell pepper.

3. In a bowl, combine cumin, chili powder, lime juice and chicken broth and pour over chicken and vegetables.

4. Cover and cook on low for 5 to 7 hours.

5. When serving, spoon several slices of chicken mixture with sauce into center of each warm tortilla and fold.

6. Serve with guacamole, sour cream, lettuce or tomatoes or plain.
